Weingut Eymann was founded in 1984 in the village of Gönnheim, at the heart of the Pfalz wine region in southwest Germany. Since the beginning, it has been owned and run by the Torey family. The estate’s vineyards are located on the upper Rhine terrace, where soils shaped during the last ice age tell a long geological story. These soils—gravel and sand from ancient rivers, topped with a layer of loess—give the wines their structure and distinctive mineral character.

Beyond Gönnheim, Eymann farms vineyards in Dürkheim and Wachenheim, including sites like Fuchsmantel, Königswingert, and Schlossberg. These higher-altitude sites are rooted in coloured sandstone and include some remarkably old, own-rooted Riesling vines—planted in 1930 and 1969—which have become increasingly valuable as dry summers become more common.

Eymann began working organically as early as 1982, ahead of most German wineries, and moved to biodynamics in 2006. The goal has always been to focus on quality and maintain the health of the vineyards for the long term. Today, Vincent Torey and his family farm 17 hectares, with more than 75% planted to Riesling and Pinot Noir. They also grow Chardonnay, Pinot Blanc, and Pinot Gris.

White wines are shaped by their site—mineral, structured, and balanced—and are typically fermented in large traditional vats or stainless steel. The red wines follow a classic approach, fermented and aged in French barriques and Tonneaux.
