The iconic Vincent Dauvissat is one of the finest domaines in Chablis, and near the top of the appellation hierarchy for the most long-lived of all Chablis. Unlike classic examples of Chablis, they benefit from judicious oak ageing which adds to both the structure and complexity of the wine. With only 11 hectares under

vine (two Grand Crus and three Premier Crus) and tiny allocations, demand always outstrips supply. Yields are tightly restricted and there is painstaking attention to detail in the winery. Although not certified, they practice organic and biodynamic farming techniques where possible and as conditions permit.
