Laurent Lignier and his father Hubert produce extraordinarily classic and elegant wines. They follow organic methods and manage nine hectares of vineyards, mainly in Morey-Saint-Denis and Gevrey-Chambertin. A low intervention approach involves minimal use of new oak, long barrel ageing (20–22 months) and bottling by gravity without fining to keep as much character as possible in the wines. The resulting style is one of elegance and purity with great ageing potential. A cool cellar slows maturation, which is one of the reasons why Laurent releases his wines a year later than most growers.
