Domaine Henri Boillot covers 15 hectares mostly in Puligny-Montrachet and Meursault for whites and in Savignylès-Beaunes, Beaune and Volnay for reds. The superb quality and precision of the wines are testament to the dedication of the family. Highly meticulous, they use biodynamic methods and pick early to retain freshness.

In the cellar, white berries are whole bunch pressed before a cold maceration and fermentation in 350-litre barrels. Boillot was one of the first to use ‘vinification integral’ in which whole berries go directly into barrels. The barrels are turned several times a day to encourage a gentle extraction of colour and flavour. 2023 is yet another spectacular vintage at Domaine Boillot.
