The Heresztyn-Mazzini project marks the beginning of a new adventure for Florence and Simon. After ten years spent working on the family vineyard in Gevrey-Chambertin, the couple decided to start their own venture. The estate currently covers 5.5 hectares spread across the villages of Gevrey-Chambertin, Morey-Saint-Denis, and Chambolle-Musigny. Every action they take is deliberate and thoroughly researched, from the vine to the cellar, and an overarching respect for the region's soils and natural environment guides all of their choices. They have adopted organic practices across all of their vineyard sites and parcels, and in 2015 their parcel of Gevrey-Chambertin 1er Cru Les Goulots achieved its organic certification. In the cellar they always do a proportion of whole bunch fermentation to give structure to the wine - just how much depends on the specific vintage conditions. Following three months in vats, the wines are matured for 12 to 16 months in barrels from carefully selected coopers. The wine is bottled on the estate, taking the lunar calendar into account so as to avoid rushing the wines, and to guarantee continued high quality.
