Côtes de Provence Tomares Ballus Rosé, Château Aspras 2020
`Tomares Ballus’, explains Sebastien, was a type of butterfly which had disappeared from its native Provence until its reappearance in Correns not long after the town became organic. Many credit the butterfly’s return to the careful farming of the community. This is an elegant rosé showing purity of fruit above all else. A beautiful pale pink colour, it has small raspberry fruits on the nose, and there is a roundness to the palate which provides structure and balance to the bright finish.
